Global offers an intriguing blend of the best of Japanese and Western knife technology. The all-stainless steel knife has a hollow handle that is filled with a precise quantity of sand, to create the perfect balance for each knife. Look carefully at the blade: a Global is sharpened to a steeper, more acute edge than a western-style knife. This 'face sharpening' means that it retains a cutting edge for longer before it needs sharpening.
The blades are made from a special steel called CROMOVA 18 – hard enough to retain a cutting edge for a prolonged period of use, but soft enough to be easier to sharpen. The knives achieve a Rockwell hardness of 56-58o.
