Every aspect of the construction of the new Yaxell Super Gou Ypsilon knives has been overseen by expert craftsman in Seki Japan, the famous Japanese city of blades where legendary Samurai swords have been produced for over 700 years.
Quite understandably, not all of us are entirely comfortable using a large chef's knife in the kitchen which makes this 12cm Super Gou Ypsilon utility knife the perfect choice for those who prefer a smaller blade but still require the strength and versatility of a chef's knife. The deep blade will make light work of carrots, parsnips, potatoes and red meat while the slender point is ideal for fine dicing. This knife has the same ultra-hard, sharp cutting edge as its larger brothers for great cutting performance and long lasting edge retention. We're sure that the Super Gou Ypsilon 12cm utility knife will occupy a prominent position in your knife set very soon.
The Yaxell Super Gou Ypsilon 12cm Utility knife is made from 193 layers of folded steel with a core of micro carbide powdered SG2 stainless steel which has never before been produced. The many layers of steel means the blade has superior sharpness and edge retention as well as creating a beautiful looking blade. Engraved on the blade is four characters, which read ‘Super Gou, The Samurai Sprit’. The handles are made of black micarta and feature a Samurai Crest inlay, one of the most traditional in Japan. Micarta is a very strong and hygienic material made from layers of canvas cloth set in polycarbonate resin and formed at high temperature and pressure. The resulting knife handle is every bit as hygienic as a stainless steel one but much more comfortable to hold, particularly after prolonged use.
